Little parchment paper wrapped packages filled with yummy goodness and baked in the oven; I tell you: a celebration in your mouth is awaiting you!
The list of ingredients is virtually endless; just stuff it with whatever comes to mind. A culinary explosion in your mouth is guaranteed. The most important part is not opening the packages until they are on your table. smile



Ingredients for for 2 people:

150 grams pasta of your choice, cooked firm to the bite
150 grams of ham, sliced thinly
200 grams of cubed cheese of your choice like Emmenthal cheese
fresh basil leaves
chives, chopped
1-2 shallots, cut in thin slices
Pesto Rosso (recipe below)
salt (use sparsely)
fresh ground pepper
parchment paper  cut in 8”x12” sheets
olive oil

Ingredients for Pesto Rosso*:

130 grams dried tomatoes
50 grams of dried pine nuts, roasted and chopped
1 clove of garlic, chopped
60 ml Olive oil
35 grams of Parmesan, grated
salt
pepper
pinch of sugar
dash of lemon juice

*The listed pesto will not be all used up in the recipe, but it keeps for a while when stored in a fridge.

1. Pesto Rosso preparation:

Puree the dried tomatoes with the olive oil, and then add the rest of the ingredients. Season to taste with salt, pepper, sugar and a little lemon juice.

Preheat the oven to 220°C. Place a few sheets of parchment paper on your cookie sheet and brush them with olive oil. Place a slice of ham on the sheet. Add the pasta, cheese cube, shallots, chives and basil on top and then and drizzle over some of the pesto rosso. Season to taste with salt and pepper, and fold the parchment paper closed on the top. Put the cookie sheet in the oven and bake it for 20 minutes.
